It is something emotional, a key Modus Operandi for us, which allows us to obtain an optimal result after many hours of work and care in our winery.

Tradition and care

Alaja is a benchmark in winemaking in Jumilla. With a complete assortment of wines to satisfy all palates.

For the elaboration of our wines we carry out a careful selection of the best grapes. Only the best bunches from the best plots will be used in the elaboration of any of Alaja’s ranges.

We add to the care and pampering of our vineyards the incorporation of the latest winemaking technologies, which together with the most traditional winemaking methods, which are those that define both our history and that of our territory, we can achieve the character and expression that characterizes the entire range of Alaja wines.

Macabeo/Airén

WINEMAKING

Grapes are immediately separated from the stalk following with a light pressing, the free-run juice is clarified in order to ferment for a period of 15/20 days at a controlled temperature between 10/16 oC. This will maintain the fruit plenitude.

TASTING NOTES

Straw yellow color. On the nose, floral with white fruits and wild herbs notes. It is fresh on the palate, very fruity, bright and tasty with a great acidity which provides a perfect expression and persistence.

FOOD PAIRING

Marinated fish (turbot, sea bass and sea bream), hake with prawns and creamy sauce, seafood, smoked food, chicken or braised beef and Italian pasta with marinara sauce.

CONSERVATION AND CONSUMPTION

The proper serving temperature of this wine must be between 4 and 6 °C. In their conservation it is important that the temperature is constant at around 15° C, avoiding temperature changes that adversely affect the quality.

Rosé, early harvest

GRAPE VARIETIES

Monastrell

WINEMAKING

Obtained from the bleeding-off of the grape’s free-run must that remains in contact with the skins for 2-4 hours. It is settled and clarified to ferment for 15-20 days at a controlled temperature between 10 and 16 ° C in order to preserve the fullness of the fruit.

TASTING NOTES

Strawberry pink color. Intense red fruit and floral aromas. On the palate, it is very fresh, fruity and amiable with good persistence.

FOOD PAIRING

Ideal accompaniment to tapas, anchovies, salads, seafood, light fried or marinated fish, salmon quiche and white meats.

CONSERVATION AND CONSUMPTION

The recommended serving temperature of this wine is between 6 and 8 ° C. In its storage it is important that the temperature is constant at around 16 ° C, avoiding temperature fluctuations that adversely affect quality.

WINEMAKING

Harvested in their optimum ripeness, the grapes are transported and received at the winery. Fermentation takes place over 6-8 days at a temperature not exceeding 24°C. The wine macerates in contact with the skins for a period of between 2-4 days.

TASTING NOTES

Intense cherry red colour with purple background. On the nose, a very intense aroma of red ripe fruit and floral hints. Very fruity and fresh on the palate, smooth, and tasty. Sweets and mature tannins, balanced acidity and good persistence.

FOOD PAIRING

Salads, vegetable casseroles, pork, grilled chicken and beef. White and blue fish, rice dishes and pasta. Soft and semi matured cheeses.

CONSERVATION AND CONSUMPTION

The recommended storage and consumption temperature of this wine is between 14 and 16oC. It is important that the storage temperature is constant at around 17°C, avoiding temperature fluctuations that adversely affect the quality of the wine.

Monastrell-Tempranillo-Garnacha Tintorera

WINEMAKING

Fermentation takes place over 5-7 days at a temperature not exceeding 24/26 ° C. The wine macerates in contact with the skins for a period between 2-4 days.

TASTING NOTES

Intense cherry red color with purple hue background. On the nose, a very attractive aromas of fruit with standing out hints of ripe fruit. Very good structure on the palate, fresh, fruity, lively and balanced with the typical notes from the Monastrell grape.

FOOD PAIRING

Mildly dressed salads, appetizers, gourmet tapas, pastas, mushrooms, charcuterie, oily and white fish, white and red meats, stews, lamb and pork roast.

CONSERVATION AND CONSUMPTION

The recommended storage and consumption temperature of this wine is between 14 and 16 o C. It is important that the storage temperature is constant at around 17 ° C, avoiding temperature fluctuations that adversely affect quality.

Monastrell and Cabernet Sauvignon

WINEMAKING

Fermentation takes place over 5-7 days at a temperature not exceeding 26/28 ° C. The wine macerates in contact with the skins for a period between 10-15 days.

AGING

6 months in American and French oak barrels.

TASTING NOTES

Red cherry color with the garnet background. On the nose, ripe red fruits with balsamic notes, sweet and toasted. The palate is well-balanced, silky, and meaty, with the presence of red and black fruits, nuts, and toasted hints from its time in barrel.

FOOD PAIRING

Salads, casseroles, pastas, mushrooms, blue and white fish, young cheeses, goat cheeses, red and white meats, roasted lamb and pork.

Monastrell

WINEMAKING

Fermentation takes place over 5-7 days at a temperature not exceeding 28/30 ° C. The wine remains in contact with the skins to macerate for a period between 10-15 days.

AGING

12 months in American and French oak barrels.

TASTING NOTES

Intense cherry red color with a “terracotta color” rim. On the nose, aromas of ripe fruit, balsamic, sweet and toasted oak notes. Very good structure on the mouth, silky and fleshy; with the presence of dark fruit and roasted notes typical from its period incontact with the oak.

FOOD PAIRING

Ideal accompaniment to salads, poultry, pastries, white meats (duck, pork, turkey), lamb roast and suckling pig.

CONSERVATION AND CONSUMPTION

Philosophy

Our philosophy is based on four fundamental pillars:

Monastrell, soil and climate.

Monastrell is a unique and special variety that makes us different. The result, grapes of surprising concentration that produce potent, fruity, sumptuous and meaty wines.

Limestone-sandy soils allow for an unequalled cultivation of our Monastrell grapes. Poor soils, low rainfall, and extreme temperatures place unique demands on the vines.

Our Mediterranean climate, dry and sunny with a continental influence, helps our grapes to a healthy ripening, avoiding disease risk and allowing for an entirely sustainable viticulture.

Sustainability.

Everything begins with the soil, respectful cultivation of our vineyards and with processes that guarantee protection of the environment. Nature is everything and taking care of it allows us to carry out sustainable viticulture, with over half of our vineyards certified as ecological.

Altitude: 700 metres
Soil: Sandy, over a bed of limestone.

Average age: 30 years
Climate: Continental with some influence from the nearby Mediterranean. A dry, arid climate.
