ORIGINS

Persian wisdom is one of the oldest in the world, presenting a myriad of advances in science and knowledge, especially in the areas of mathematics and astronomy. Sages such as Ja’faar ibn Muhammad Abu Ma’shar al-Balkhi, or prophetic priestesses such as the Persian Sybila who presided over the Oracle of Apollo, one of the most important of the time, are proof of the immense search and intellectual restlessness that existed.
 
In ancient Persia, the word «Tallis» was synonymous with wisdom and was a surname given to wise men who had been blessed with the «gift of speaking the truth». Tallis is a tribute to nature and to our vines which, in their wisdom, give us these wines.

Our wines

Tallis-Blanco

TALLIS MACABEO

Type: Young White.
Grape Varieties: Macabeo.

Winemaking: The grapes are immediately separated from the stems. After a light pressing, the must is racked and clarified for fermentation for 15/20 days at a controlled temperature of between 10 and 16ºC. This allows us to maintain the fruity character of the wine.

Tasting Notes: Pale yellow with greenish tints. Floral nose with notes of fresh and tropical fruit. It is very fresh in the mouth, very fruity, tasty and with a balanced acidity.

Food Pairing: Marinated fish (turbot, sea bass, sea bream), hake stuffed with prawns in creamy sauce, seafood, smoked fish, grilled chicken or veal, Italian pasta with seafood sauce.

Conservation and Consumption: The appropriate drinking temperature for this wine should be between 4 and 6ºC. It is important to keep it at a constant temperature of around 15ºC, avoiding temperature jumps that could have a negative influence on its quality.

Tallis-Monastrell

TALLIS MONASTRELL

Type: Young Red.
Grape Varieties: Monastrell.

Winemaking: Fermentation takes place over a period of 5 to 7 days, not exceeding a temperature of 24/26 ºC, the wine remains in contact with the macerating skins for a period of 2 to 4 days.

Tasting Notes: Cherry red wine of good intensity and garnet background, with very attractive fruity aromas on the nose, with hints of ripe fruit. Very good structure in the mouth, fresh, fruity, lively and balanced with typical notes of the Monastrell variety.

Food Pairing: Lightly dressed salads, appetizers, gourmet tapas, pasta, mushrooms, charcuterie, blue and white fish, white and red meats, stews, roast lamb and pork.

Conservation and Consumption: The appropriate temperature for conservation and consumption of this wine should be between 13 and 15º C. It is important to maintain a constant temperature of around 17º C, avoiding temperature fluctuations that could negatively affect the quality of the wine.

Tallis-Crianza

TALLIS CRIANZA

Type: Aged red.
Grape Varieties: Monastrell.

Winemaking: Fermentation takes place over 5-7 days at a temperature not exceeding 26/28 ° C. The wine macerates in contact with the skins for a period between 10-15 days.

Aging: 6 months in American and French oak barrels.

Tasting Notes: Red cherry color with the garnet background. On the nose, ripe red fruits with balsamic notes, sweet and toasted. The palate is well-balanced, silky, and meaty, with the presence of red and black fruits, nuts, and toasted hints from its time in barrel.

Food Pairing: Salads, casseroles, pastas, mushrooms, blue and white fish, young cheeses, goat cheeses, red and white meats, roasted lamb and pork.

Conservation and Consumption: The recommended serving temperature of this wine is between 16 and 18 ° C. It is important that the storage temperature is constant at around 17 ° C, avoiding temperature changes that adversely affect quality.

Our philosophy is based on four fundamental pillars:

Monastrell, soil and climate.

Monastrell is a unique and special variety that makes us different. The result, grapes of surprising concentration that produce potent, fruity, sumptuous and meaty wines.

Limestone-sandy soils allow for an unequalled cultivation of our Monastrell grapes. Poor soils, low rainfall, and extreme temperatures place unique demands on the vines.

Our Mediterranean climate, dry and sunny with a continental influence, helps our grapes to a healthy ripening, avoiding disease risk and allowing for an entirely sustainable viticulture.

Continuous Improvement.

Continuous Improvement and Excellence. From the very beginnings through to today, we have always strived to improve, day after day, with our ultimate goal being the achievement of excellence in our viticulture, our processes and in our wine.

Sustainability.

Everything begins with the soil, respectful cultivation of our vineyards and with processes that guarantee protection of the environment. Nature is everything and taking care of it allows us to carry out sustainable viticulture, with over half of our vineyards certified as ecological.

Distance: 34km from the historical centre of Jumilla.

Vineyard extension: 120 hectares
Altitude: 700 metres
Soil: Sandy, over a bed of limestone.

Average age: 30 years.
Climate: Continental with some influence from the nearby Mediterranean. A dry, arid climate.
