Dominio de Alma resumes the essence of the Mediterranean in a wine bottle. Dominio de Alma is the popular name
adopted by the Murcian landscape between gorges in the shadow of the Sierra de Pila, south of Jumilla, where a poet
whose name is now forgotten said that time stands still and the soul becomes immortal. A landscape full of beauty and
from where we extract the grapes that give meaning to our wines.

GRAPE VARIETIES

Macabeo-Sauvignon Blanc.

WINEMAKING

Grapes are immediately separated from the vine. After a light pressing, the free-run juice is clarified in order to ferment for a period of 15/20 days at a controlled temperature between 10/16 oC. This maintains a persistent fruity flavor.

TASTING NOTES

Pale straw yellow color with greenish rim. On the nose, floral with fresh and tropical fruit notes. It is fresh on the palate, very fruity, bright and tasty with a great acidity which provides perfect expression and persistence.

FOOD PAIRING

Marinated fish (turbot, sea bass and sea bream), hake with prawns and creamy sauce, seafood, smoked food, chicken or braised beef and Italian pasta with marinara sauce.

CONSERVATION AND CONSUMPTION

The proper serving temperature of this wine must be between 4 and 6 °C. In its conservation it is important that the temperature is constant at around 15° C, avoiding temperature changes that adversely affect the quality.

70% Monastrell-30% Syrah.

WINEMAKING

Fermentation takes place over 6-8 days at a temperature not exceeding 24/26°C. The wine macerates in contact with the skins for a period between 2-4 days.

TASTING NOTES

Garnet colour with plentiful violet rim. On the nose, a very intense fruity aromas highlighting hints of ripe red fruit. Powerful and yummy. Fruity, fresh, smooth, and meaty on the palate. Ripe and round tannins, balanced acidity, and delicate and tasty sensations.

FOOD PAIRING

Roasted sirloin, stews, roasted chicken, meat rice dishes, legumes, casseroles, semi mature cheeses.

CONSERVATION AND CONSUMPTION

The recommended storage and consumption temperature of this wine is between 14 and 16°C. It is important that the storage temperature is constant at around 17°C, avoiding temperature fluctuations that adversely affect quality.

WINEMAKING

AGEING

3 months in American and French oak barrels.

TASTING NOTES

Vivid ruby colour. Deep summer-berry aromas and spices such as black pepper and cloves. Lovely hints of vanilla on the finish, giving it toasty complexity from the American oak barrel. Ripe and sweet tannins. Fresh and rich, satisfying finish.

FOOD PAIRING

Roasted sirloin, stews, roasted chicken, meat rice dishes, legumes, casseroles, semi mature cheeses.

WINEMAKING

AGEING

12 months in American and French oak barrels.

TASTING NOTES

Garnet red coloured wine. Intense aromas of red and black fruits, accompanied by rosemary and vanilla. Smooth sweet tannins, delicate and elegant structure with intense blackberry, nutmeg, and cinnamon notes. Velvety texture, long and satisfying finish.

FOOD PAIRING

Stewed meats with creamy sauces, veal ragout, roast lamb, roast stuffed turkey, rice and casseroles with meat. Fish such as monkfish, cod or tuna steaks, goat cheese and aged cheeses.

CONSERVATION AND CONSUMPTION

Monastrell is a unique and special variety that makes us different. The result, grapes of surprising concentration that produce potent, fruity, sumptuous and meaty wines.

Limestone-sandy soils allow for an unequalled cultivation of our Monastrell grapes. Poor soils, low rainfall, and extreme temperatures place unique demands on the vines.

Our Mediterranean climate, dry and sunny with a continental influence, helps our grapes to a healthy ripening, avoiding disease risk and allowing for an entirely sustainable viticulture.

Altitude: 700 metres
Soil: Sandy, over a bed of limestone.

Average age: 30 years.
Climate: Continental with some influence from the nearby Mediterranean. A dry, arid climate.
